Watermelon gazpacho | Gazpacho de Sandia

This is another splendid example of how to prepare a good beans stew and just in 10 minutes. Watch out for a good quality clam and pamper the beans, it is worth it.

 INGREDIENTS

  • 500g watermelon, peeled and chopped

  • 5 tomatoes, chopped

  • 1 red (bell) pepper, chopped

  • ¼ cucumber, chopped

  • ¼ onion, chopped

  • ½ garlic clove, chopped

  • 1 slice of bread, chopped

  • 1tsp salt

  • 1tsp ground cumin 

  • 3tbsp sherry vinegar

  • 100ml extra virgin olive oil 

Preparation

  1.  Place all the ingredients except the olive oil in a blender and liquidize until smooth. After 2 minutes and the gazpacho is very smooth pour the olive oil on a thin string so it emulsifies for the last 30 seconds Check the seasoning and adjust if necessary. Serve over ice.


    If you want to serve this as a starter and make it a bit more filling, serve it in a soup bowl with croutons and a drizzle of extra virgin olive oil.
